Food preservation as the name suggests is a technique to preserve food means to make its shelf life long. 
WHAT IS SHELF LIFE???
Shelf life is the stability of food against the ease of spoilage, you can say expiry date. As medicines get expired, fruits and vegetables also get spoiled, which is then left for no use. Every food product has different time period to get expired.
MORE THE WATER ACTIVITY IN FOOD, MORE WILL BE THE EASE OF SPOILAGE OF FOOD.
What is Water Activity???
As we know, water is the need of human being, animals and plants. One can live without food for one day, but cant live without water. Same like u and me,bacteria also needs water for their survival. So food is the best home for these notorious species, where they are getting free unlimited water and food in the form of protein as a nitrogen source, carbs for energy. Therefore,Free available water present in food are the main reason of food spoilage.
There are lot of methods to preserve food form these terrorists i.e. bacteria like drying of food, pickling, salting, sugaring, refrigerating, freezing etc.
All these are the great methods of food preservation but refrigeration is the only technique to preserve food in its original form.
Now, How refrigeration is differ from freezing???
Every food can be stored in freezer??
What actually refrigeration do with the food??

FREEZING OF FOOD
Refrigeration and freezing both works totally, both have different processes to prevent food.

  • FREEZING it is done at very low temperature i.e. -18 degree Celsius, freezes free available water present inside the food that is available for microbial growth which in result kill the bacteria and this leads to no spoilage of food. Food is safe for up to 6 months, shelf life depend on the nature of food.
  • REFRIGERATION is done at 3-7 degree Celsius, do not freezes the water but it slows down the microbial activity which also extend                                                                               the shelf life of food.
  FOOD STORED IN FREEZER
Food stored in refrigerator faces no changes in texture,quality and color. But not all food survives the low temperature of freezer like fruits gets quaggy, while there is minimal effect on vegetables and no effect on meat.

REFRIGERATION AND FOOD
Refrigeration what actually do, it extract heat from food and transfer it to external environment and make food cool, cool !!!
In ancient times before the invention of refrigeration people use ice, dry ice, salt water solution to keep food cool and available for more than its natural shelf life.
Ice extracts heat form food as latent heat of vaporization gets converted into liquid form and keeps food preserve. Nowadays, refrigeration is used for this purpose, " Process of extracting heat from lower temperature heat source, substance, or cooling medium and transferring it to higher temperature heat sink".
The prime objective of refrigerator is to preserve food quality like texture, color, flavor and safety.
